When I decided to turn my life around and leave all animal products out of my diet, I knew there were going to be some challenges. One of them was my addiction to eggs for breakfast. Sunny side up, over easy, scrambled, in a sandwich or a burrito, I loved eggs in any form they can come. So I needed to find a replacement for them.
During the first months of my transition, I discovered the very versatile personality of Tofu. I could use it as meat replacement in all kinds of recipes. I was happy to learn that Tofu could be served for breakfast instead of eggs. I was so surprised when I took a bite of my very first Tofu Scrambled. It actually tasted like real eggs!!
Today, I do not have a lot of tofu in my diet, but once in a while, I like to spoil my man with a nice and brunch; Tofu scrambled, and home fries.
Tofu scramble for 2:
- Half brick of firm Tofu, well pressed and crumbled
- 1 Tomato, diced
- ½ Onion, diced
- 1 Garlic clove, minced
- 4-5 sliced Mushroom
- ½ cup diced Red bell Pepper
- 1 bunch of greens (kale, Spinach or Arugula)
- 1 cup unsweetened Almond milk
- 3 Tbs Nutritional Yeast
- Hot pepper flakes
- Estragon, or thyme
- Sea salt and ground pepper, to taste
1 – Fry the onion and garlic in some extra virgin Olive oil. Add the mushroom and Pepper.
2 – When veggies are cooked, add the tomatoes, Tofu, Almond milk, Nutritional yeast, and spices. Stir well and simmer for 5 minutes.
3 – Serve with home made potato fries, toasts or fruit salad
