Recipe · Vegan Indian Salad

Today we want to share with you Orion’s Indian Salad, from our 100% raw menu. This beautiful dish puts colors on the table and fills you up without ever making you feel heavy. It is made of cauliflower, carrot, and raisins, in a delicious creamy turmeric curried sauce. Serve it as a side dish or as a complete meal, alone or on a bed of greens.

Ingredients

Salad

  • ½ cauliflower, broken into small pieces
  • 3 carrots, peeled and shredded
  • 4 green onions, minced
  • ½ cup coriander, minced
  • ¼ cup raisins
  • 1 Tbs sesame seeds

Sauce

  • ¼ cup Tahini
  • 2 Tbs olive oil
  • 4 Tbs water
  • ½ Tbs sea salt
  • 2 Tbs apple cider vinegar
  • 1 tsp turmeric
  • 1 ½ tsp dried coriander
  • 1 tsp yellow curry powder
  • ½ tsp fresh ginger
  • pepper

Blend all the ingredients for the sauce until smooth. If too thick, add some water.

In a bowl, mix all ingredients for the salad with the sauce. Sprinkle with sesame seeds.

Serve on lettuce leaves and raw crackers.

This salad tastes even better once it has marinated for a day.

You can keep it in a container in the refrigerator for 4-5 days.
