Today I am sharing Orion’s Indian Salad, from our 100% raw menu. This beautiful dish puts colors on the table and fills you up without ever making you feel heavy. It is made of cauliflower, carrot and raisins, in a delicious creamy turmeric curried sauce. Serve it as a side dish or as a complete meal, alone or on a bed of greens.
– ½ cauliflower, broken into small pieces
– 3 carrots, peeled and shredded
– 4 green onions, minced
– ½ cup coriander, minced
– ¼ cup raisins
– 1 Tbs sesame seeds
– ¼ cup Tahini
– 2 Tbs olive oil
– 4 Tbs water
– ½ Tbs sea salt
– 2 Tbs apple cider vinegar
– 1 tsp turmeric
– 1 ½ tsp dried coriander
– 1 tsp yellow curry powder
– ½ tsp fresh ginger
– some pepper
Blend all the ingredients for the sauce until smooth. If too thick, add some water.
In a bowl, mix all ingredients for the salad with the sauce. Sprinkle with sesame seeds.
Serve on lettuce leaves and raw crackers.
This salad tastes even better once it has marinated for a day. You can keep it in a container in the refrigerator for 4-5 days.
